It's time to make pesto.....
Shopping for pine nuts under $15/lb. Any suggestions?
Wikipedia has this to say:
"Unshelled pine nuts have a long shelf life if kept dry and refrigerated (at -5 to +2°C), but the shell must be removed before the nut is eaten; shelled nuts (and unshelled nuts in warm conditions) deteriorate rapidly, becoming rancid within a few weeks, or even days in warm humid conditions. Pine nuts are commercially available in shelled form, but due to poor storage, these rarely have a good flavour, all too often already being rancid before they are purchased."

There is a stand on Federal between Speer and Alameda that is seasonal. The only other stand I have seen this year on Federal is between I-70 & 36 but it is open year round and also sells Fireworks. (That is Adams County which has no ban.)Often times the Hatch Chili stands have Pinon too. (BTW, After the too damn hot for this gringo experience last year, I have decided to take just buy a smaller portion from Jack N Grill this year.)
Or that is another idea, You could ask at Jack N Grill for a Pinon recommendation.
Purchased at KS, fraught with moral dilemnas...posted as $12.99 a pound, rang up as $13 something; weighed at the '1/2' mark, which evidently was the 1/2 kilo mark (they really should note that on the scale in a more obvious way) as my order rang up at over a pound....now to find an actual recipe or at least the correct proportions.
